About this deal

It is instant yeast (as a subcategory of instant yeast) milled into smaller granules and doesn’t need to be activated into water. Despite these differences, both fresh and dry yeast perform the same function in baking, and fresh yeast will make your bread rise just like dry yeast. For more info on fresh yeast and how to convert between fresh and dry yeast, see our previous post: How do I bake with fresh yeast? What’s the best way to store yeast? For this loaf, I used a 3:1 mixture of all-purpose flour to whole wheat. (The original recipe just called for all-purpose flour.) The result was a light, airy loaf with a chewy crust, which barely had time to cool before getting dunked in olive oil and eaten. Best of all, I was able to fit baking this bread into a schedule that also includes caring for an extremely energetic toddler and regular work deadlines. Making it required all of ten minutes of work, and that includes clean up. I suppose it doesn’t include the 18-hour rise time, but that’s what sleeping is for. In days gone by there was a significant difference between active dry yeast and instant yeast. Today, the difference is minimal, and the two can be used interchangeably—with slightly different results. Let's look at ADY first.

How does SAF Gold work? Sugar likes to absorb water; and when there is sugar in bread dough, it pulls water away from yeast, leaving the yeast thirsty. The yeast cells in SAF Gold are bred to require less liquid to function, so they’re better able to withstand sugar’s greedy ways with water.

I make the dough and let it rise at room temperature (about 64°F). It takes a little over 3 hours for the dough to double during its first rise in the measuring cup; and another 3 hours to double in the pan prior to baking. So instead of the recipe’s called-for 2 to 3 hours rising time using 2 1/4 teaspoons yeast, it takes 6 1/4 hours using 1 teaspoon yeast (while keeping the rising temperature cool). If it’s past the “best by” date, it can be difficult to decide whether or not to use your yeast. You don’t want to throw it away if it will still work, but you don’t want to put in all the effort into making a loaf of bread and then realize it didn’t rise in time for dinner.

Saccharomyces cerevisiae is just one strain of the more than 1,500 identified species of yeast. 1,500 strains of yeast? But wait, there's more—literally. Those 1,500 identified yeasts are just an estimated 1% of the yeast population in the world; most species remain as yet unnamed. In short, yes. If you find yourself in possession of instant yeast and your recipe calls for active dry, don’t fret. Grease two 13×9-inch pans and arrange eight rolls inside each. Be sure to leave space between the rolls because they will expand during this proof. SAF Gold, another SAF variety, is an "osmotolerant" yeast, perfect for sweet breads, and any dough with a high amount of sugar. SAF Gold works best when the amount of sugar is between 10% and 30% of the amount of the flour, by weight (this is called a "baker's percentage"). So, for a 3-cup-flour loaf (12 3/4 ounces flour), you'd choose SAF Gold if the sugar is greater than 3 tablespoons, or up to about a heaping 1/2 cup. Understand that the greater the amount of sugar, the more slowly your dough will rise. Just remember: the less yeast, the longer the rising time (and/or the warmer the rising temperature). Start by cutting the yeast in your recipe by 50 percent and if the results are reasonable, lower the amount even more next time. I think you'll be happily surprised at just how far you can make a little bit of yeast go.You might think one and done is great here, but in reality, you're better off with the seven-day treatment, or if you must, the three-day treatment, according to Dr. Brandye. "I see too many people who use the 1-day ovule, and they come in because they think that they are still having symptoms, but in actuality the yeast infection is gone but the medication was so concentrated that it gave them a form of dermatitis," she adds. Considering you just treated yourself for itching and irritation, the last thing you want added to your plate is vulvar dermatitis, which can also cause itching and irritation. People who have diabetes may also have higher risks of yeast infections, says Dr. Sophocles. If yeast infections are persistent for you, it'll be helpful to manage your blood sugar closely, adds Dr. Sophocles. Why? Well the yeast feed on sugar, so the more sugar that's in your bloodstream, the more that yeast can thrive. 19. Be mindful of your yeast infection triggers. Once kneaded, pop the cinnamon roll dough into a greased bowl, turning once to coat. Cover and let the dough rise until doubled in size—about an hour. If the chilly weather outside means your home isn’t quite warm enough for a good proof, don’t worry! Here are tips on how to proof bread when it’s a bit colder than is ideal. The yeast will wake up and start to feed on its fuel, the provided sugar. Carbon dioxide will be released as the yeast consumes the sugar, and the mixture will begin to foam. Bench scraper: If you love to bake bread, grab a bench scraper. This helps clear your counter of scraps and you can use it to divide this dough into individual rolls. SAF instant yeast, produced by France’s LeSaffre company, leads the way among instant yeast brands, with Red Star also commanding a good percentage of the market. LeSaffre is the largest yeast producer in the world, responsible for fully one-third of the total amount of yeast manufactured yearly. Usually, the measuring of yeast is straightforward when the recipe calls for an envelope of yeast that weighs 7 grams. The main difference between the two is how they are used. Active yeast has to be activated before being used. Instant does not. It can simply be mixed in with the rest of the ingredients. Remember that this slow rise extends to the shaped loaf, as well as dough in the bowl. Once you've shaped your loaf, covered it, and set it aside to rise again, it may take 2 hours or more, rather than the usual 1 to 1 1/2, to rise fully and be ready for the oven. Or try our Greek Olive and Onion Bread, a recipe yielding two crusty, flavorful loaves that uses 1/2 teaspoon yeast in the starter — and none at all in the dough. Make all three of these recipes (Italian rolls, hard rolls, and savory Greek loaves) and have more than enough bread to keep your family going for several days or more using less than 1 1/2 teaspoons of commercial yeast. Can’t beat that, eh? Sprinkle the dry yeast on top of the water, trying to avoid setting up large, dry clumps. Let sit 15 minutes, then gently stir.

The same amount of one can be substituted for the other. RapidRise is another, less common type you might find. It can also be substituted in a one for one ratio but works faster than active dry. Dry yeast Active dry yeast By starting with a smaller amount of yeast, you slow down the amount of carbon dioxide, alcohol, and organic acids being released into the dough, thus ensuring the gluten remains strong and the bread rises well — from its initial rise in the bowl to its final rise in the oven.
