Many of the gruit herbs I've read up on are normally used in boiled water to make a tea, so if you add them in the late boil or at flame-out, you can see the same effects as the tea. In a pilot project, we brewed a saison with lavender notes and compared it with a saison for which we had infused barley with lavender.

I mean that the flavour profile is full of universally loved tastes - vanilla, malt, cola botanicals and wooden casks.
